I got this recipe from the side of the Wilton Cookie Press box. Just use Free Indeed Food All-Purpose flour and add a little xanthan gum and you have gluten-free spritz cookies.
Wisk together flour, xanthan gum, and baking powder.
Beat butter and sugar till light and fluffy.
Add egg, milk, and extracts. Then add flour mixture. Add food coloring in you would like.
Fill cookie press with dough and drop unto an un-greased cookie sheet.
Bake at 350 10 - 12 minutes or until edges are light golden brown. Cook for 2 minutes on cookie sheet.
