Peanut Blossoms

This is my brother’s favorite Christmas cookie and now it is my oldest son’s favorite. Please let me know if you make it with Sun-butter for a peanut free option.
Ingredients
- 4 1/2 cups Free Indeed all-purpose gluten-free flour
- 2 tsp Xanthan Gum
- 1 1/2 tsp Salt
- 1 tsp baking powder
- 1 tsp baking soda
- 1 cup Shortening I used Earth Balance
- 1 cup brown sugar
- 1 cup Sugar
- 1 cup peanut butter
- 4 eggs
- 2 tsp Vanilla
- 4 tbsp milk or dairy free milk

Instructions
- Preheat oven to 350
- Whisk together dry ingredients - flour, xanthan gum, salt, baking powder, and baking soda.
- Beat together shortening, sugar, peanut butter, eggs, vanilla and milk. Mix in dry ingredients and mix well.
- Roll into small balls - a small cookie scoop works well. Dough with be soft. Roll cookie dough ball in sugar. Flatten with a glass.
- Bake at 350 for 8 minutes. Remove from oven and place chocolate on top and press gently. Return to oven for 2 minutes.
- Note: 1 cup of chocolate chips can be stirred into the dough as a substitute for the kisses. Bake these cookies for 10 minutes.
