This is my brother’s favorite Christmas cookie and now it is my oldest son’s favorite. Please let me know if you make it with Sun-butter for a peanut free option.
Whisk together dry ingredients - flour, xanthan gum, salt, baking powder, and baking soda.
Beat together shortening, sugar, peanut butter, eggs, vanilla and milk. Mix in dry ingredients and mix well.
Roll into small balls - a small cookie scoop works well. Dough with be soft. Roll cookie dough ball in sugar. Flatten with a glass.
Bake at 350 for 8 minutes. Remove from oven and place chocolate on top and press gently. Return to oven for 2 minutes.
Note: 1 cup of chocolate chips can be stirred into the dough as a substitute for the kisses. Bake these cookies for 10 minutes.
