Muffins – Blueberry, Chocolate Chip, or Your Favorite

This recipe is Ina Garten’s Blueberry Muffins recipe.  To make it with no gluten or dairy I just substituted in our Free Indeed Food all-purpose flour, added xanthan gum and used dairy free butter and milk.

Instructions
  1. Preheat the oven to 375 degrees. Line muffin tins with paper liners.
  2. Whisk the flour, xanthan gum, sugar, baking powder, baking soda, and salt together.
  3. In the bowl of your mixer, mix together the milk, melted butter, and eggs.
  4. Add the dry ingredients to the wet and mix until blended.
  5. Fold the blueberries, chocolate chips or your favorite mix-in into the batter.
  6. Scoop the batter into the 24 prepared cups, filling them almost full.
  7. Bake the muffins for 20 minutes, until golden brown.
