Andes Mint Cookies
  1. Cook butter, brown sugar, and water until the butter melts. Remove from heat, stir in chocolate chips. Let stand for 10 minutes.
  2. With mixer on high beat eggs. Add chocolate mixture and mix well.
  3. Mix dry ingredients – flour, xanthan gum, soda, and salt. With mixer on low slowly add dry ingredients. Chill dough for 1 hour.
  4. Pre-heat oven to 350. Roll into balls or scoop with a medium cookie scoop. Bake for 10 minutes. Remove from oven and top with a mint. Return to oven for 1 minute to melt the mint. Gently spread out mint with a knife.
